Poutine is a dish of fried potatoes, usually French fries, and cheese curds topped with a brown gravy. It originated in Quebec and is a popular appetizer in the Midwest. It is normally seen in “greasy spoons” but here is elevated for a high-end operation. Chuck roll is braised until fork tender and pulled into chunks. Place golden fried fingerling potatoes, fresh cheese curds and sauteed wild mushrooms on the plate and top with beef. Serve with a rich brown gravy.
