Eggs Omar with Truffled Latkes
Strip loin is grilled whole, sliced and laid on a toasted English muffin and topped with a perfectly poached egg and creamy hollandaise. It is served with truffled potato latkes and garnished with shaved truffles.
Eggs Omar is a twist on the classic breakfast or brunch dish, Eggs Benedict. Eggs Omar replaces the traditional Canadian bacon in a benedict with steak. For this concept, we use a strip loin, but this could be done with just about any cut and would be a great way to cross-utilize meats on the menu. This dish could be included on any style menu for breakfast or brunch and can be de-elevated by excluding the truffles and pairing with hashbrowns or another breakfast side item.
